melon & feta salad with mint & sumac
This recipe creates a large side for 4ish people
Ingredients
watermelon - 2c - cut into 1 inch cubescantaloupe or honeydew (or both) - 2c - cut into 1 inch cubes
feta in brine - 1c - drained, cut into 1 inch cubes
fresh mint - 1/4c+ picked leaves
sumac - 2T
olive oil - to taset
lemon - to taste (you could use any fun vinegar here like sherry, too)
flakey salt - to taste
Method
Peel watermelon rind with a sharp knife then cut into 1 inch cubes.
Peel & seed cantaloupe with a sharp knife then cut into inch cubes. Melon can be laid out on paper towels to soak up and extra juice.
Drain feta from brine and cut into 1 inch cubes or crumble into think chunks.
On a large platter, arrange half of the feta and melon then drizzle with olive oil, a squeeze of lemon, flakey salt, half of the sumac, and half of the mint. Continue with remaining ingredients.
Enjoy chilled!
