melon & feta salad with mint & sumac

This recipe creates a large side for 4ish people

Ingredients

  • watermelon - 2c - cut into 1 inch cubes
  • cantaloupe or honeydew (or both) - 2c - cut into 1 inch cubes

  • feta in brine - 1c - drained, cut into 1 inch cubes

  • fresh mint - 1/4c+ picked leaves

  • sumac - 2T

  • olive oil - to taset

  • lemon - to taste (you could use any fun vinegar here like sherry, too)

  • flakey salt - to taste

Method

  1. Peel watermelon rind with a sharp knife then cut into 1 inch cubes.

  2. Peel & seed cantaloupe with a sharp knife then cut into inch cubes. Melon can be laid out on paper towels to soak up and extra juice.

  3. Drain feta from brine and cut into 1 inch cubes or crumble into think chunks.

  4. On a large platter, arrange half of the feta and melon then drizzle with olive oil, a squeeze of lemon, flakey salt, half of the sumac, and half of the mint. Continue with remaining ingredients.

  5. Enjoy chilled!
